Bad kitchen day


Last thursday was an extremely busy and tiring day for me. It was my fil's birthday. I decided to bake fil a mango mousse cake after receiving 5 ripe mangoes from mil but mainly because i wanna try it after much raves from some floogers :P


Decorated using some what-is-left-in-the-fridge-and-snacks-cupboard-presentable bits :P

Heh.. ignore the messy mousse! I was too, too tired to beautify it and don't laugh at the anyhow piped fresh cream at the bottom! It was an impromptu design where the pipe followed wherever the hands went when the mousse didn't manage to cover the last quarter of the cake :P

The day started at 7am all the way till evening. It was that hard a work. Unfortunately nothing went right.

First, it was the sponge cake. When i took it out from the oven, the baby started crying. By the time i went back to the cake, it sank. But luckily the spong cake was meant to be in between the mousse so it didn't matter that much. However, that somehow put a dent onto my jolly mood.

Then, the cupcakes. I wanted to make orange butter cupcakes for the boys' teachers during the meet-the-parents-session the next day and also a very nice girl at Amore as a token of appreciation. But. First thing i did was to mix up the ingredients during the creaming and mixing stage. This resulted a slightly heavy, dense texture instead of the expected soft and light cake. Sigh :(

From there, i proceeded on with the mango mousse. I over beat the whipped cream! *sobs* Instead of the mousse texture, i got the whipped cream texture *sniffs* :(

So what we were eating in the end was actually mango whipped cream cake, not mango mousse cake.

Aiihhhsss... :P

I don't hate it or like it but others were quite taken by the cake except the fussypot hb who thought the cake was so-so only. Somehow, i think the cake will taste real good if i were to do it correctly. Which i hope i will tomorrow. Heh.

Apart from the cupcakes and the mango whipped cream cake, i also did mango pudding [this was an exception from my bad kitchen day though. It was good! Similar to those served in Crystal Jade/East Ocean Teochew Restaurant. At least something went okay. Grin] and mini mango whipped cream cake in cups.

But that was not the end of my bad kitchen day. My dreadful day ended with dreadful buttercream. Again, due to some distraction (think i was in the midst of stirring the mango pudding ingredients in a saucepan on the stove), my buttercream was over beaten. It turned watery. The pink colouring which i intended to use was finished up by my confinement nanny and she didn't even inform me!


In the end, i ended up with pandan flavour buttercream?

Hope and pray that the recipients don't dislike it as much as i did. Hehe..

I was too tired to re-bake the cupcakes and re-do the buttercream, which i wanted to initially. Dislike giving others something which isn't up to my standard.

Blessed


Guess what?

An angel sent me a bag for my birthday this year. Totally didn't expect a bag! What a coincidence too, since i was posting about bags early this morning.

Received the parcel a couple of hours ago and here it is, the gold/orchard colour Naraya tote. So girlie. Love it! :)



What may be even more surprising is that i don't even know the angel personally! She is someone who reads my blog since almost a year ago. Never had i known anyone who would do this, really. A girl that is! At most, it was birthday cards together with bookmarks from my cyber friends. That was almost a decade ago. Furthermore, they were not girls but guys who used to fancy me *ahem*ahem* :P

Thank you imp.. U got me speechless at your generosity and gesture *muaks* :*

And the other bag is from my bestie, Jeannie who sent it to my house personally on my birthday.. And she knows how much i loved it! Used it on the very day itself! Heh.

Ahhhhh.. I feel so so blessed =)

I don't have many friends here but i have a few very very very good friends. That, to me is more than enough already.

I want bags!!


I have this thing for bags (don't think i know any girl who doesn't :P), all kinds especially small shoulder bags since i don't carry that many things when i go out.

I wish i could afford this :(

Another expensive one. Let's just drool only okay? (for me that is. Hee)

Yes, i did it!


Finally...

Bread that is really edible! A yummy one too :P

But of course, my bread is nothing compares to Angie's. Somehow, i couldn't shape my dough at all. Too sticky. I wonder if it's due to the substituted bread flour with cake flour? Didn't have enough bread flour then and i didn't even realise, as usual :P

So instead of making them into buns, a loaf it was.


Funny colour right? Hb snapped this using his new hp, N95 which he loves, especially the camera and kindly offered to exchange his hp with mine! (if only u know what hp i'm using, u'll faint! Too outdated! :P)

But i did tweak the recipe slightly besides the 'unavoidable' bread flour substitution, which was to mix 3 tsp of coffee granules with hot water instead of 2 tsp since Angie mentioned on that coffee aroma/taste bit.

Nevertheless, improvement is very much needed when it comes to bread baking. I wish i have enough guinea pigs to help me eat it but unfortunately, i don't. Er, anyone stays in Choa Chu Kang? Heh.

Steamed tapioca kueh


I believe this is the first time i've ever done a traditional kueh.

Was never motivated to do it because of the ingredients involved : fresh from market ingredients.

For this steamed tapioca kueh, i'll need fresh tapioca (grounded). For that, i'll need to go to a specific wet market to get it but i'm too lazy :P

After i told her that i was keen to do this for a foodie gathering last Sat, she volunteered to get the tapioca for me even when it'd mean taking a bus to the wet market to get it. How to not love her aye? *wink*

Okay, i know the colour was supposed to be yellow but because of the pandan flavouring used, it became green instead. Looks like ondeh ondeh isn't it? Heh.

If you love Bengawan Solo's steamed tapioca kueh, you'll love this more because it tastes more real, especially the freshly steamed grated coconut.

Full of flavour and so juicy!

Like what my maid who polished almost the whole thing said, sedap-nyaaaaaaaa.. :P

In fact, i think that they are so adorable looking that it doesn't suit my 'status' (as a mom to 3) anymore. Lol.


Psstt! I just received a short-all today which i loveeee to bits! So i don't think i'd be buying this anymore unless hb strikes 4D! :P

Can't really see the details here but i love the flowers (on the bottom left and upper right). Prefer the shirt in white than green even though both are equally lovely :)

pps : i think i'm ready for macarons after much procrastinating and my unwillingness to spend on the silpat since me ain't so crazy over it but i am dying to see how difficult it is to handle and bake. Hehe. Wait for the pictures! (even if my first attempt is a failed one which i think highly very likely. Ha! :P -- too lazy to do research. Just bake!--)

Cake for you?


Dear readers,


The husband suggested why don't i sell the chocolate truffle cake to those who are interested?

Not for gaining profit purpose, more like for letting you to try out the cake since i have nothing but praises for it :P

I gave it a thought about what hb'd said and i asked myself, why not? I'll just sell this cake for a limited time and that's it. Moreover, i know i don't have that many responsive readers, so i'm really fine with it. It'll be like baking for myself but with more effort made :P

But but.. sekali hor, no one orders then i really dunno how to hide my face man. Hahahaha... So, i wont be posting whether i have any orders or not. Lol.

Anyway, the cake will not be a decorative one. It will be exactly like what i've posted. Plain looking. To me, i think that is more than sufficient. Let the cake speaks for itself! As i've mentioned above, it's really for you to try it out only okay? :D

I'll be selling it at $39, an 8" cake using nothing else but only Valrhona dark chocolate and Lurpark or President's butter.

Chocolate truffle cake


This is the b.e.s.t chocolate cake i've ever eaten.

Made from Valrhona 55%.



I know it doesn't look like it but it is! Trust me. I'm a fussy pot when it comes to cakes and especially more when it's my own baking. If the cake isn't good, i rather not eat it. I mean, why waste my stomach space? :P

This was the cake which i mentioned here, a few posts before this. This was also the cake which i'd invited Davis and her girls over for but unfortunately, she couldn't make it due to weak stomach that day. Davis dear, next time okay? ;)



I must say, the chocolate is as creamy as this. Really comparable! A good dark chocolate is a MUST use when it comes baking this. No buts :P



I was pretty disappointed at how the pictures above turned out. Really couldn't capture the real 'beauty' of the cake.

The last picture here (above) was taken at the very last minute when i was pigging out, hoping it'll do some justice to the chocolate cake. Grin. It was made from the extra chocolate and the cut out chocolate sponge cake after the above 8" cake tin was filled up to the rim.

Tee teeth teething~


My baby has started teething!

Since almost a month ago when he turned 4 months old. I was shocked no doubt because the normal teething period for babies are when they turn 7-8 months old, just like my other 2 boys.

But doc says it's okay. Nothing to worry about. Cases like this happen to almost 5% of the infants born.

No wonder the baby has been actively sucking his and my hands whenever possible. Just grab and suck. And the drooling? Let's not start on that k? I'll go on and on! Heh.


Funny but i like it (when baby does his 'vampire act' on me). It feels really ticklish :P

I'm super happy today!

Because i just came back from shopping. Haha..

Not clothes shopping but tablewares and cake boxes shopping!

It's good news for you too! Grin.

Because you no longer have to be put up with looking at my hands-me-down-but-new-tablewares again and again in the photos. Heh.

And the beautiful, cutesy cake boxes?

They'll be used to reward some of the very important people to my boys - their teachers, on this coming Friday during the teachers-meet-the-parents-session and the rest will be for other very nice people in our lives :)

Can't wait to bake the cakes and pack them up nicely!

Strawberry friands


This was not in my to-do-list at all. But because of my leftover egg whites from a chocolate truffle cake i made recently, i picked this to bake :)

Verdict :

I love love it!!

So fragrant-ly delicious. Easy on the nose and fantastic in the mouth. Grin. I love the slightly coarse texture due to the almond meal used. Nice.

This is definitely something which i'll look forward to whip up again when i have extra egg whites to spare, which is very soon since the husband has requested for a second dosage of my new found love (or rather, our new found love :P) - chocolate truffle cake! Just you wait.. Picture coming up very soon! But somehow, the photos really do no justice to the very heavenly, divine, sinful, everyone-must-try-to-eat-even-if-you-dislike-chocolate-cake cake.

Oppss.. yes yes, back to friands. Lol. Best of all, making friands doesn't require a mixer!

Just whisk with your hand. Yupyupyup, lightly whisk with your hand. Easy peasy! *wink*

Rice dishes


Been cooking and baking like mad for the past few weeks.

Wonder when i'll stop this madness of mine. Grin. But there are still so many to-bake bakes in my list, all waiting and calling out for me to try baking them :P

Anyway, some of our dinner last week :)

My chapalang fried rice : mushroom, chinese sausage, prawns, spring onions, eggs and last but not least, topped with fried silver ikan bilis

This dishes are cooked based on the ingredients i have at home. So everything is anyhow add in. No specific recipes for them because i myself also not sure how much this and that which i'd added in :P

Chocolate truffles


This chocolate is simply to die for!!

I hardly do review for chocolates but this is an exception because they are really so, so good.

What's more, they are easy on your pocket too. Sometimes, good chocolates don't just have to be Goddiva etc. Cheaper ones do taste pretty good too, like this one *wink*

According to my sil (she's the one who bought this for us from the US), the dark chocolate version is only available there in US but in Sg, we can get the milk chocolates -- the red ones-- for this version pretty easily.

How different is Lindt Lindor Truffles?

I don't know about you but this is the first time i've ever eaten a chocolate that is this creamy, not too sweet and it has got creamy liquid chocolate in the center! Very mountain-tortoise-me i know! Grin.

When you put the whole chocolate in your mouth, it simply burst and you'll feel the creamy liquid chocolate start flooding your mouth. It's like eating the lava chocolate cake but this is better because it bursts and flows out in your mouth instead of watching it flowing out onto your plate. Almost everyone who eats this sure to have that 'mmmmmmmmmmmmmmmm, this is so good' expression on their face as i observed. Lol.

Really, the chocolates are simply divine.

It's so worth getting fat because of them. Haha :P

Don't laugh! Part II


My first attempt on souffle :P


Yes, i'm that thick!

I am thick skin enough to post my failures and get laugh at :P

However, even though the subject says 'Don't Laugh' but by all means, do go ahead and laugh out loud if you want. Hehe.

Because when i first saw the souffle baking away in the oven at almost-the-finishing-time, i simply couldn't help but to laugh out loud hysterically at their ridiculous height!

Together with my helper no less :)

Why such height?

Because i kept topping up the souffle batter till the paper rim when i was supposed to top it till the rim of the ramekins only or slightly less. You see, even though the recipe stated serve 4 but it didn't! It was meant for 6 at least and i only have 4 ramekins.

So what happened was the kiasu me refused to throw the remaining batter away, i ended up topping and topping the ramekins until the very last spoonful of the batter. Heh.

Double boiled cordyceps soup


Since a toddler, boy1 has been having on and off sensitive cough which attacks during his weakest or whenever possible eg: after having cold food/drink, after swimming.

It's been a headache to us, the parents and also his nai nai who loves him to bits. Hundreds of dollars per visit(which now amounted to thousands!) have been spent on this boy, just to cure his cough.

Lately, we've been hearing so much raves on Cordyceps on its goodness so the ever loving nai nai bought me 1 liang after 1 liang just for me to cook the soup not only for boy1, but boy2 and old boy too.

As the cordyceps don't come cheap, somehow, i am pretty reluctant to drink it given that i'm a.l.w.a.y.s so healthy. No kidding! I hardly fall sick. When i do, i rejoice! Grin. Mainly because i'll get to be pampered instead of pampering others.. always!

How good is cordyceps?

I've heard from an auntie that drinking it constantly for a period of time actually managed to cure his asthmatic-grandson. The usual raves would be :
  1. great for curing cough
  2. strengthen lungs
  3. even as er, aphrodisiac! But hey, that's not the reason hb drinks it okay? I feed him this because of reason no.2. H-O-N-E-S-T! On top of this, hb works in a health-hazardous workplace, all the more i have to take care of him
If you have anyone with coughing problem, do give this a try!

It's worth it :)

Creme Caramel


My first try out with Donna Hay's recipe from Modern Classics 2 which i borrowed recently from the library but i'm so gonna buy this book now! :)



The creme caramel is absolutely lovely!!

The texture is so very smooth and the monster in you will definitely surface when you're having this, just like my hb's monster did. When i asked for a bite after finishing mine, he scooped up a teeny weeny fraction of the creme that was equivalent to the size of a, a, a .. hmm... say, 2 red beans (the ones which we use to cook red bean soup) put together? Trying to be funny right?! *glare at the husband*

But on the other hand, i was quite pleased actually. That shows how much hb likes it! Heh.. :P

My husband, the cheese cake lover, bought me this book..



I must say, it's a bbbbbeaaauutiful book.. with beautiful photos and droolicious recipes of course.

I really, really, really can't wait to try them out!

Gosh.. i've been baking almost everyday, trying different this and that.

Mother's Day


What i got for Mother's Day :)

When i saw the content, my first reaction was 'huh?'

Me : Shuoze, what's this? You are so pretty and you love me?
Sz : Oh, Mrs Leong asked why i love you mah.. so i said, i love my mommy because she loves me and she is so pretty..

Me burst out laughing. Hmm.. what kind of logic is that? Lol.

Neverthless, i was pretty flattered! Haha :P

The lego below was built by boy1 with no guide, reference or whatsoever. Because the box and reference book were torn and got thrown away.

Boy1 knows i love his many creations that he could do with his creativity to this lego set, based solely on his imagination. Hence, he built this for me on my birthday as a present until he's old enough to earn his own $$ to get me a real present (which is a princess ring! *faint*) and flowers, according to the little builder. So touching right? Hehe.. now, let's hope he'll keep his promise! But of course, instead of princess ring, a diamond ring perhaps? Heh :P




I didn't want the Power Ranger on it.. but the boy insisted, saying the Blue ranger is there to protect!

Not too bad afterall..


Because i wanted to doll up a little today, i went for pedicure yesterday.

It was my first time there.

I didn't take up their package even though i quite enjoy it. Mostly because i don't usually go for pedicures. The last time i went, it was exactly 1 year ago :P


But, do you know what i got after my session after filling in my particulars just because i was nice enough to give my feedback voluntarily about the seating position and so happened that the lady boss was there to overheard me and even adjusted them on the spot before asking me to try the seat again?

Reason given was : It's your birthday tomorrow! Heh.


Apart from the above incident, my girl pals were so sweettttttttt to me as well. I never told them that it was my birthday today, not wanting to trouble anyone to get me pressies or buy me cake or hold a dinner just for me. Paiseh lah.. :P

But it was such a coincidence that the girls planned to have dinner yesterday and when they did find out it was my birthday today, they got me a yummilicious cake! Not only that, Celest even got me a pressie, in such a short notice! I was pleasantly shocked of course. Who in the world wouldn't yeah? It was a lovely lovely necklace.

Lovely isn't it? But it looks even better in real life. Thank you Celest! :D

As usual, when the credit card bill arrives, i'll be the first one to scan through the bill.

This morning, after i realised that the bill has been left unopened for 3 days (was too tied up lately), i decided to open it to double check.

As i go through, i saw this.

My heart skipped a beat.

Hb bought me flowers for my birthday!!

You see, i've been telling hb upfront that i want a rose since 3 weeks ago, almost everytime when hb goes grocery shopping but he never buys it. I specifically asked for 1 rose, not more than that. Like any other girls, i love flowers! But i don't like the price that comes with it. With that kind of money, i could have gotten myself 2 good cook books *wink*.

However, i still like to receive them. Be it 1 or many. To get a win win situation (not spend so much and yet still get flower), i opted to receive only 1. Lol :P

So yeah, i was excited, happy, so over the moon, exhilarated and thrilled to bits upon seeing that albeit i said i only wanted 1 rose. But i was also disappointed because i got to find out earlier before the flowers arrive. You see, i love surprises!

After that, i decided to get in touch with hb about it, over sms.

Me : Lousy la u. Your surprise is no longer a surprise already.
Hb : What surprise?
Me : Flower lo
Hb : No la. Not getting flowers la. You cute. Ha ha ha
Me : Already saw the credit card bill ah

Hb called after that..

Hb : Hello
Me : Yes? So what time is delivery? We need to go out now.
Hb : Really lah, it wasn't for you. The date was around 3 weeks back right?
Me : Yeah but i know you ordered earlier.
Hb : Ha ha ha.. really really. Not for you.
Me : Okie lo. Not for me lo. Then who was it for? (still thinking hb trying to play pretend)
Hb : It was for C, the Esso engineer who was warded then. Remember?
Me : (WHAT? Oh no! Really wasn't for me. Hb isn't lying afterall! My heart stopped beating literally) Ohh.. hahahahahahahahhaah
Hb : You pig la you.. I'll pretend this whole thing never happen ok to save you from embarrassment. Hahahaha...

For a while, we were laughing hysterically over the phone then i pressed the red button. My eyes got hot and in less than 2 seconds, my vision got cloudy and blurred.

Honestly, i didn't know why. Not sure if it was because of embarrassment or disappointed.

After another 10 mins when i was already driving, i received sms from hb again.

Hb : You blushing furiously already?
Me : More like heart broken
Hb : He he he.. Your birthday this year not good la. Since thurs want to order, the earliest can send is 14. Today worst, 15 then can deliver
Me : Yeah
Hb : Because of mother's day ma

I stopped replying after that.

Because i got quite upset.

But on another hand, i was quite glad that hb didn't buy me flowers afterall. Now i can get 2 good cook books with the money saved or start another shopping spree online! :)

Oh well.. women.. sometimes we can't even understand ourselves yeah?

Al Dente


My mom came to visit almost 2 weeks ago. As usual, we had a blast!

Brought mom to several places this time. Botanical Garden for fish feeding, Bukit Timah Nature Reserve for hill climbing (but we never made it to the top! Lol), Ria for ayam penyet and last but not least, the mother and daughter -> me, celebrated Mother's Day at Al Dente, Esplanade before mom went back the next day.

I wanted to bring mom to Sage initially. Unfortunately, they were closed. So was PS Cafe. Mom wanted somewhere special with nice ambience and since the 2 above weren't open, hence, Al Dente is was.

Read that Al Dente at Esplanade has got fabulous view. Very ideal for couples. But mom was an exception :P

We enjoyed ourselves quite a bit. Having a fantastic weather then helped a little.


Nice soft and soothing music in the background, excellent service, very good view and food wise, some were yummy and some were not :P

Oh, best of all, the dinner didn't burn a gigantic hole in my pocket *wink*

But overall, because of the other factors above, dining at Al Dente is quite something albeit the food was so-so only :)


p.s : a must try would be the garlic cream pasta with slipper lobster. Absolutely delicious!

Breadventure


I've been inspired by Angie to bake bread lately, after seeing her yummilicious buns [no pun intended!hee].

However, my first loaf of Hokkaido Milk Loaf was a failure *sobs*. Reason being is that i didn't knead enough. And also, i have no idea why the loaf split.. others didn't *boo hoo*

Can u see how heavy they are? Not soft and fluffy like what others have been raving.. Nevertheless, they still taste good despite not being soft and fluffy. But i want soft and fluffy bread!

The next day, i was determined to get my texture right but not with Hokkaido Milk Loaf though. This time, i tried sweet bun recipe instead because Hokkaido loaf is pretty expensive for experimenting due to the whipping cream (i use President's) used. I made sure i knead till the dough was non stick and elastic.

During the first proofing, i saw this!




Imagine my excitement!

I was absolutely delighted and pleased because the original dough size was barely 1/3 of the size in the above picture! I was squealing, laughing and even did a little Macarena dance! My first time seeing such huge dough during proofing.. so, do pardon me!

The sweet buns rose and baked beautifully.. I was grinning from ear to ear :P

BUT!

My mistake no. 1 : i didn't line my pan. Didn't know that i should. So when i tried taking the buns out, they tore into half. The buns above was a fixed temporarily just for the photoshoot.

I thought i was gonna melt in delight when i took my first bite but sadly, i didn't :(

The buns tasted funny. Abit too yeasty tasting. And not as soft and fluffy as i'd anticipated.. Sigh. What did i do wrong, i wonder...

Then, i re-read the recipe.

Lo and behold!

I added 2tbsp of the dry active yeast instead of 2tsp!!!

It wrote tsps. Not tsp. No wonder i thought it was tbsp..


I didn't know whether to cry or to laugh. Grin. And i refused to tell the husband my mistake, not before he eats it for breakfast the next day *evil grin* because if i did, he wouldn't have eaten them! :P

But right after hb did and commented that the buns still tasted like a failed buns, i divulged the truth which was known only to me and my helper. What did i get after that? A thunderous laughter that was meant for me, me the klutz! *kabish*kapow*

Anyway, guess what i'm doing now?

I'm now in the midst of baking another bunch of sweet buns! Hohohoho... Boy, do i know how to torture or what? *hiak*hiak*

Dear guinea pig, you better pray for my success this time round! Sending me an email full of baking bread tips wont help. Praying might help, because i didn't read the tips. Hahaha..

Angie dear, if you are reading this, do send your bread angel to me ok? For a temporary loan. I think mine is sleeping away, not watching after me :(
